French Vinaigrette with Feta Cheese

Makes about 1 cup • 1 tablespoon: 1 gram protein • trace carbohydrate

Use on mixed-greens or spinach salads.

⅓ cup red wine vinegar

1 tablespoon Dijon mustard

⅓ cup pure-pressed extra virgin

olive oil

1 tablespoon minced fresh parsley

freshly ground black pepper,

to taste

⅓ cup crumbled feta cheese

In a small bowl, using a fork, whisk red wine vinegar and mustard. Slowly drizzle in olive oil, whisking constantly until vinaigrette thickens. Stir in parsley, black pepper and feta cheese. Taste, and adjust seasonings. Store covered in refrigerator. Bring to room temperature before using.
